Healthy Egg and Hummus Bagel (yum!)

One of my other passions in life, other than sharing health tips, is cooking! I’ll be honest…I love to eat. Tying to stay healthy and satisfy my love of eating has, unfortunately, been a challenge. Being a nurse for about 20 years, I have met many people for whom this also has been difficult.

For the past few years, I have tried to cook healthy foods that I find delicious, and I decided to finally share my recipes with all of you! These recipes are very easy to make.

Today, I would like to present, “Healthy Egg and Hummus Bagel”! (sorry I’ve been watching alot of Chopped and Iron Chef Japan recently, and many of the chefs present their plates to the judges this way. BTW Chairman Kaga from Iron Chef Japan rocks!! :))

This recipe takes about 15-20 minutes to make depending on how fast you can spread hummus on a bagel ๐Ÿ™‚ Hope you enjoy this easy recipe! If you make it, please post a pic of your egg and hummus bagel creation. I love seeing other people’s cooking ๐Ÿ™‚

What you’ll need:

  • 1 bagel
  • 2 eggs
  • Hummus
  • Salt and pepper (for taste)
  1. Put enough water in a pot to cover the bottom 1/4 of the pot. Boil on high heat. Because you will be steaming the eggs, you do not need to put alot of water in the pot.
  2. Once the water is boiling, place the 2 eggs in the boiling water and cover with a lid. Set a timer for 7 minutes. (If you would like your eggs a little more hard boiled than what is shown in the picture above, boil the eggs for 8 or 9 minutes instead.)
  3. Slice your bagel in half and toast it.
  4. Grab a bowl and place cold water and ice in it. Once the eggs have boiled/steamed for 6 minutes, place them in the bowl with ice water and let the eggs sit in the ice water for a few minutes.
  5. Once the bagels are toasted, place them on a plate and spread hummus on both slices.
  6. Take the eggs from the ice water and remove the shell from both eggs.
  7. Cut the eggs into slices and place the sliced eggs evenly on both hummus bagels.
  8. Sprinkle with salt and pepper to taste…and VOILA!! You’re done! Enjoy!!

Vegetarian Burger Meal Under 600 Calories!

An absolutely delicious, healthy vegetarian burger meal!

I was craving a hamburger today, but I also wanted to eat something healthy. I decided to make a vegetarian burger meal using my trusty double bin air fryer and wanted to share it with all of you ๐Ÿ™‚ If you’re looking for a way to satisfy your burger craving and eat healthy, I highly recommend trying my vegetarian burger meal. Here’s how to make it:

  1. Cook a frozen vegan burger patty in an air fryer at 350F for 10 minutes. and frozen tater tots at 400F for 12 minutes.
  2. While those two items are cooking, cook an egg sunny side up for a few minutes on medium low heat in a pan. Cover with a lid to help the top part of the egg cook evenly.
  3. Sliced up a tomato and place it on a lightly toasted bun spread with Dijon mustard.
  4. Once the burger patty is done cooking, put it on the bun and carefully place the sunny side up egg on top.
  5. Plate the tater tots came on the side and with a little sriracha.
  6. Finally, enjoy a yummy hamburger meal which is vegetarian and under 600 calories. Absolutely delicious and healthy! Check out the quick video I made below ๐Ÿ™‚

Healthy lunch recipe you can make at home in under 20 minutes!

Since ALOT of people stocked up on groceries due to the #coronavirus quarantine, I wanted to share an easy, healthy lunch dish you can make at home in about 20 min!

What you will need:

  • 2 slices of bread
  • Toaster
  • 2 boiled eggs
  • Hummus
  • Sriracha or sauce of your choice (optional)
  1. Boil 2 eggs for about 10 minutes. While boiling the eggs, toast your 2 slices of bread.
  2. Spread hummus on each piece of toast.
  3. Slice up the 2 hard boiled eggs and put on the toast with hummus.
  4. Garnish with onion (or any veggie) and serve with sriracha (or a sauce of your choice) on the side.

You’re ready to enjoy a healthy, delicious home made lunch that’s also under 500 calories! Have a good lunch!
